The wet ingredients for this easy low carb recipe are 4 beaten eggs, 1 teaspoon vanilla, 3/4 cup light olive oil, 1 cup unsweetened apple sauce, and 2-3 drops apple oil. The topping is optional but if you would like to make it you will need 1 tablespoon rolled oats, 1 tablespoon oat flour, 1 teaspoon brown Sugar Twin, and a couple shakes of cinnamon.

To prepare this easy low carb recipe all you do is mix the dry ingredients together and the wet ingredients together in separate bowls. Have the oven preheated to 375ºF, combine the soy flour, soy protein, eggs, baking powder, sour cream, and oil in a bowl and mix well. Fold in half of the cheddar, pour the batter into the pan and sprinkle the remaining cheese on top and then bake for about half an hour.
